What's better than chocolate chip pancakes in the morning... or any time of day for that matter? These pancakes taste super yummy and turned out even better than I thought they would. They are perfect for a fun breakfast and super easy to whip up last minute! The pancake recipe I use most often is from Betty Crocker's Cookbook which is super handy for lots more than just pancakes. You can easily use your favourite pancake recipe as well, just with added chocolate chips but here's how we did it...
You will need:1 large egg 1 cup all-purpose flour 3/4 cup milk 1 tablespoon brown sugar 2 tablespoons vegetable oil 3 teaspoons baking powder 1/4 teaspoon salt butter or non-stick spray frying pan chocolate chips topping of your choice Helpful tip: You know your pancake is ready to flip when the top is covered in bubbles. | How: Get out a medium bowl and beat your egg until fluffy. Add the remaining ingredients and beat until well combined but don't worry if you have a few lumps in your batter as this is normal. Now you can decide whether or not you want to add chocolate chips (It was a pretty easy decision for us). We didn't use an exact measurement as the amount of chocolate totally depends on your personal preference so we sprinkled some in until we were happy with the quantity. My family has an electric stove so I often have to preheat my pan but it depends on the type of stove you have. Once you start cooking be sure to watch how hot your pan is because if it's too hot you'll end up with burnt pancakes that have a raw middle. If you're having trouble cooking your pancakes all the way through I would suggest either turning the heat down or thinning out your mixture with a bit of extra milk. |
This recipe makes around 9 to 10 pancakes and feeds around 3 people depending on the size you make them and how hungry you are. And that's it! You pretty much just throw everything in a bowl and cook it up. These pancakes are so super easy and use ingredients that most of us would already have in our cupboard! Once your pancakes are cooked to perfection I would encourage everybody to be creative in the kinds of toppings you use. If you're a syrup person maple syrup is my favourite kind (and I'm not just saying that because I'm a Canadian) but a drizzle of honey with powdered sugar is also incredible. That's what we decided to go for along with a big dollop of whipped cream and some cut up strawberries to top it off.
